i read this in asparagus' build thread about making motor mounts, is it possible to just take off one at a time so that my car wont be out of commision while the motor is pulled?

I'm pretty sure you can, however it is going to be a PAIN with our specific mounts. I know for a fact that many other cars can do it without toooo much effort. 240sx for example, but for me and many other people(everyone) the stock s12 motor mounts were hard to take off even without the motor!

i can vouch for this. except i would say with a few specialty tools such as a plasma and a cutting wheel, they come off rather easily... haha. what do you mean "out of commission"? our motors only have two mounts, if you take one off, dont expect to cruise to the grocery store with just the other one.
Just raise the engine using a floor jack. You can get it high enough to raise it off both mounts.....put the floor jack under the bell housing. Kinda a pain to get it back on both mounts....but I've done it a few times...so it is possible

im guessing you're shipping your mounts to these people to make new ones? go to the junk yard adn take 2 off there and send those in if you're worried about not having a running car.

and i didnt plan on taking it to the store or anything with only 1 mount. i just have to leave my car in my mechanics shop as i live in an apartment and dont wanna leave my engine hoisted outside in the ghetto....
I say buy 4 hockey pucks, drill out the center, slide a bolt through and you're done. Tried and true method with the V8 guys. I've seen it done on a CA18DET S13. Besides, hockey pucks and hardware is cheappppppp. Probably cheaper than just the tube of urethane.
